Coolers (walk in, cook cooler, and juice/milk cooler) - temperatures satisfactory. Temperature records are being kept.
Cooked food - temperature checks are being carried out. Corrective action - keep cooking.
Hot holding - >60 C/140F for hot holding lunch items - good. All hot food is served within 2 hours.
Corporate food safety plans available (computer).
Walk in freezer - temperature satisfactory.
Hand washing sinks have liquid soap and paper towels. 3 available in main kitchen.
Staff have FoodSafe certificates if working in kitchen. Uniforms and hairnets worn.
Meat slicer clean, Used for ham and roast beef. Quats is used after cleaning to sanitize.
Quats sanitizer is changed frequently and dispensed at 200ppm (detected using your test strip) - good.
Wiping cloths are sanitized using quats sanitizer which is changed throughout day.
Sanitation plan is available.
Commercial dishwasher has a final sanitizing rinse of >82 C/180 F at the final rinse gauge and >>71C /160 F measured inside of the machine - good.
General cleaning is good today.
Area behind the cooking equipment at the floor wall junction by floor drain - some peeling material - This is already scheduled for repair.
Pest control contract and pest monitoring program is in place - no concerns.
Meals on wheels - separate file - is offered at lunch mondays to fridays.
Food is also provided to assisted living - separate file.
Independent living (served within 2 hours and no food is reheated or left at this location).
