Observation (CORRECTED DURING INSPECTION):
The back door is propped open and flies were observed inside the premises. Flies and pests transfer germs and dirt from their feet to food and food contact surfaces.
Corrective Action(s):
The back door MUST remain closed at all times, OR a screen must be installed on the back to door prevent the entry of flies or pests. Inform all staff that door must remain closed at all times until a screen door is installed. At time of inspection, staff closed the door.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
The waste pipe under the 3-compartment sink is leaking and water is pooling on the floor. The dirty, pooling water will attract and breed flies.
Corrective Action(s):
Repair or replace the leaking pipe so it no longer leaks.

Comments

A follow-up inspection was conducted, the following observations were made:
- A new chest freezer was purchased and installed. The freezer was -16C and had a thermometer.
- The exhaust canopy was professionally cleaned, the next cleaning is due in January 2019 (as per service sticker).
- The sanitation level of the premises has improved. All surfaces have been washed and there is no accumulation of food and grease. Ensure staff continue to clean every day to up keep this level of sanitation. The staff did a good job in cleaning.
- A bowl of ice-water is storing the ice cream scoops when not in use, and the ice-water is changed hourly. Great.
- Soap for the dishwasher has been ordered and to arrive tomorrow. Ensure the supply line from the soap to the dishwasher is primed to remove all air bubbles from the line.
