Observation (CORRECTED DURING INSPECTION): Staff are not using sanitizer when washing/rinsing/sanitizing the slush trays. Staff could not locate any bleach for the 3 compartment sink.
Corrective Action(s): As discussed, the trays needs to be washed/rinse/sanitized in your 3 compartment sink. Wash the tray in the 1st compartment with soap water, rinse in the 2nd, and fill the 3rd compartment with a mixture of bleach/water (1/2 tsp bleach per 1 liter of water, 100 ppm chlorine residual) and submerse for at least 2 minutes to sanitize. This is why you were required to install the 3 compartment sink .
