- Warehouse and processing area maintained in sanitary condition.
- Hot and cold running water, liquid soap and paper towel present at warewashing sinks in processing area and in staff washrooms.
- Walk-in cooler 3C
- Walk-in freezer -18C
- Chest freezer -20C
- Cutting boards in good repair.
- Ensure cutting boards are clean and sanitized at least every 4 hours. One prep table is used for chicken and the other is used for beef and pork.
- Bleach sanitizer solution present in spray bottle for sanitizing food contact surfaces. Concentration measured 200ppm chlorine. Test strips present to verify.
- Reviewed manual warewashing procedures with Operator - Wash, rinse, sanitize, air dry. Bleach present for sanitizing step
- No signs of pest activity noted at the time of the inspection. Pest control contract in place with service every 2 months.
