Observation (CORRECTED DURING INSPECTION): Observed a bucket of water by the grill which is used to store in use utensils. All in use utensils to be stored in a clean empty container, ice water or in temperature control setting (e.g., <4C or >60C). In use utensils now stored in ice water.

Observation: Standing water observed under the dishwasher and next to the grill.
Corrective Action(s): Clean any standing water on the premise. Correct this by: today.

Observation: No detectable sanitizer was measured for the low temperature dishwasher.
Corrective Action(s): Operator to service the dishwasher. At minimum, 50 ppm chlorine residue must be detected on the plate level after each cycle. The operator prepared for manual dishwashing at the three compartment sink at this time. Correct this by: 2 weeks.

Routine inspection conducted:
Hand washing stations are fully equipped with hot and cold running water, liquid soap and paper towels.
General sanitation is adequate (see an exception in the violation section).
All coolers measured at 4C or less (internal temperature measured for self-serve raw protein).
Freezer measured at -18C or less.
Hot holding (rice) measured at 60C or higher.
Food contact surfaces sanitizer measured at 100-200 ppm chlorine as per test strips.
Appropriate thawing practice observed.
No sign of recent pest activity noted at this time. Weekly pest control service in place.

Unannounced follow up inspection to be conducted in 2-3 weeks.
