Observation (CORRECTED DURING INSPECTION): 10 packages of salmon were left out at room temperature. The operator said that since they were frozen, they require defrosting to be used tomorrow. Operator instructed to thaw food under cold running water or in a refrigerator.
Corrective Action(s): Since the salmon was still frozen, it was moved to a cooler. Discontinue the practice of leaving food out at room temperature.

Comments

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
The chest freezer was < -18 C.
Hot held foods were > 60 C.
Bleach sanitizer bucket was available and was measured at 100 ppm chlorine.
No evidence of pests. Pest control is on site every 3 months, report reviewed during the inspection.
General sanitation was satisfactory.
Note: This facility no longer has an additional storage room.
