Observation (CORRECTED DURING INSPECTION): Cooked custard stored at room temperature. Internal temperature measured >60C. Staff stated that it is being cooled and will be used up within 2hrs. No time stamps available.
Corrective Action(s): Immediately begin time stamps for the cooked custard. Custard must be stored at < or = 4C once cooled adequately.

Observation (CORRECTED DURING INSPECTION): Improper three compartment dishwashing method. Staff skipped the sanitizing step.
Corrective Action(s): Fraser Health three compartment dishwashing method poster provided. Ensure to sanitize all cooking equipment and utensils using 100ppm chlorine bleach concentration. This will be verified at the time of the inspection.

Observation (CORRECTED DURING INSPECTION): - Hand soap empty at the main handwashing station.
- Missing hand soap inside the staff washroom.
Corrective Action(s): Immediately provide hand soaps at the noted areas. Staff must wash their hands thoroughly prior to handling food. Glove use does not substitute handwashing.

Observation: Multiple sticky glue traps completely soiled in fruit flies.
Corrective Action(s): Replace the sticky glue traps. Provide three most recent pest control summary report to the health inspector prior to the follow up inspection.

Observation: Broken ice machine cover. Staff was using saran wrap to cover the ice at the time of the inspection.
