Observation (CORRECTED DURING INSPECTION): THIS IS A REPEAT VIOLATION.
1. Handwash station outside washroom does not have liquid soap or paper towels.
2. Handwash station in kitchen area lacks liquid soap.
Corrective Action(s): Handwash stations were stocked with liquid soap and single-use paper towels at time of inspection. As mentioned earlier, a violation ticket will be issued for non-compliance.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: No handwash stations were adequately stocked in kitchen and restroom, and kitchen employees did not use bar area to wash their hands prior to food preparation.
Corrective Action(s): Handwash stations were stocked with hot/cold running water, liquid soap, and single-use paper towels. Employees instructed to wash their hands before any further food preparation.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Raw meats and eggs stored adjacent to vegetables.
Corrective Action(s): Raw meats and eggs were placed underneath vegetables. Ensure that raw products are never placed next to or above ready-to-eat products or vegetables to prevent cross-contamination.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Large frozen sausage product defrosting at room temperature.
Corrective Action(s): Sausage product was placed back into the walk-in cooler for defrosting. Do not defrost items at room temperature - items must be defrosted in the cooler, under cold running water, in the microwave, or as part of the cooking process.

304 - Premises not free of pests [s. 26(a)]
Observation: Dead German cockroaches observed in the following areas:
1. In sticky traps underneath cabinet outside interior dining room
2. Underneath two dining tables, removed at time of inspection
3. In traps underneath bar area, and one next to the sanitizing pail
4. Ceiling light of kitchen
Corrective Action(s): Remove dead cockroaches from facility. Consult your professional pest control company on further measures of monitoring and controlling for cockroaches. If cockroaches are coming from the ceiling or another part of the building, discuss on prevention measures such as repairing the ceiling or sealing gaps.

Eliminate sources of moisture in the kitchen and keep the kitchen in a better sanitary condition.

Observation: Following areas require further cleaning:
1. Edges of flooring around dining area contain debris and oil
2. Flooring underneath bar area
3. Edges of walk-in cooler
4. Shelving in walk-in cooler contain large amounts of dried and settled debris
5. Area behind dough presser
6. Area in walk-in freezer has pooling / frozen liquid that needs to be removed
Corrective Action(s): Thoroughly clean and remove debris and grease from the aforementioned areas. Your facility needs to be kept in sanitary condition to handle food safety and protect food from contamination. Unsanitary conditions are also attracting pests, including cockroaches, to your facility.

Routine inspection conducted. The following observations were made:

1. Temperatures
- Temperatures within health requirements
- Walk-in cooler at 4C
- Walk-in freezer at -18C
- Prep cooler, Samsung chest cooler at 4C
- Chest freezer at -18C

2. Hygiene and Sanitizing
- 200 ppm chlorine residual sanitizing pail present at front and back of house at time of inspection
- Utensils and kitchen equipment generally in good sanitary condition - no evidence of pests / German cockroaches present on food contact surfaces at time of inspection

3. Storage
- Food items are elevated off the floor

4. Administrative
- Permit posted
- Operator has FoodSafe 1, but it is not renewed yet. The grace period has been extended to August 29, 2018. You must renew your FoodSafe 1 by August 29, 2018

5. Pests
- Professional pest control company conducts routine audits every two weeks
