Observation (CORRECTED DURING INSPECTION): small containers of gravy in walk in cooler probed internally @ 39.5 deg. C. Gravy was placed in cooler 2.5 hrs ago as per operator.
-container of gravy was discarded. Potentially hazardous food (i.e. gravy) must be cooled from 60 deg. C to 20 deg. C in 2 hrs and 20 deg. to 4 deg. C in 4 hrs.
Place gravy in ice bath to cool quickly.

Observation (CORRECTED DURING INSPECTION): -the following foods were probed internally at each service counter Upright fridge:
Cardiff - Apple sauce @ 8 deg. C, Milk @ 6.5 deg. C
Bamfield - Peach Jam @ 5 deg. C, Milk @ 5 deg. C
Dawkins - Fruit lax, milk, fruit platter @ 5 deg. C
Ashton - Fruit lax @ 7 deg. C
Corrective Action(s): move the above noted items to the walk in cooler in the kitchen and other perishables.

Observation (CORRECTED DURING INSPECTION): -meat slicer contains meat debris near the blade
Corrective Action(s): -Wash/sanitize each part by disassembling the meat slicer. Ensure the meat slicer is washed/sanitize after each use or every 4 hrs minimum.
