Observation: Back door screen/seals are loose with small gaps. and may allow entry of pests in to the kitchen. Repair is needed.

Premise is sanitary.
No signs of pests at the time of inspection.
Hot and cold water available.
Dedicated hand sinks with liquid soap and paper towels available.
Staff demonstrate good personal hygiene and sanitary hand washing.
Washrooms are sanitary with fully stocked hand sinks.
Food protected from contamination. Food is from an approved source.
Rack cover in use for cooling foods on shelf.
Equipment in good working order.
Ice machine is sanitary with dedicated hand scoop.
Take out containers and utensils are sanitary.
3-compartment sink in use.
After correction sanitizer in use at 200 ppm chlorine.
Dishwasher final rinse at 73C at the plate. The cycle takes 10 minutes.
Valid Permit posted in conspicuous location.

Holding units:
Vegetable cooler 4C, stand up cooler at -2C peas.
Counter cooler 4C vegetables/pita bread, service cooler at 3C sauces.
Walk in cooler ambient at 3.2C contents at 4C to 8C dough.

Recommendation: Ensure to check the temperature of the walk in cooler daily to ensure it can reach temperatures at 4C or below.
Keep cooler door closed when possible to prevent unit from heating up.
