- All freezers at -10C to -20C.
- Hot held rice at 60C or above.
- Ensure broth are on continuous boil; the temperature should be maintained at 60C or above.
- Low temperature dishwasher reached 53C max. and final rinse water measured 100ppm chlorine.
- Bleach sanitizer available for sanitizing; measured at 100ppm.
- Foodsafe certified staff on site.

*Place insect monitor traps throughout the facility to monitor pest activity.
*Deep cleaning of the facility required. Re-organize and discard any unused equipment (eg. meat slicer)
*Remove the largest broth pot (with the bottom dispensing spigot) from the premises. The size of the pot is too big and cannot be easily washed/cleaned in the dishwashing sink. Use smaller pots for broth.
