Preparation cooler #2 (dressing) was measured at 2 degrees C below (ambient) and 3 degrees C above (internal food temperature)
Hand sinks are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels
Quaternary ammonium compounds (quats) sanitizer measured 200 ppm in buckets and in spray bottle
Note: Recommend using timer system to ensure sanitizer is changed on a regular basis. Reminder that if a timer is used, sanitizer may still need to be changed more frequently than timed intervals, for example, if sanitizer solution is soiled.
New piece with intact blades has been installed in chopper noted on previous report
