Observation (CORRECTED DURING INSPECTION): Staff had a pail of soap and bleach used to wipe down/sanitize surfaces.
Corrective Action(s): Do not mix soap and bleach together to sanitizer surfaces. Soap may inactivate bleach and soap is not considered food grade. Soap and bleach was discarded at the time of inspection.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handwash station had a bar of soap next to the liquid soap.
Corrective Action(s): Discontinue the use of bar soap to prevent potential cross contamination. Handwash stations must be supplied with hot and cold running water, liquid hand soap, and single use paper towels. Bar of soap was discarded at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Employee was observed handling a pail of soap and bleach and coughing into wrist without changing gloves.
Corrective Action(s): Employees must adhere to good hand hygiene practices and wash hands/change gloves whenever they become contaminated Operator reviewed glove usage practices with employee at the time of inspection.

Observation (CORRECTED DURING INSPECTION): A detergent container was used to store a bag of frozen chicken.
Corrective Action(s): Detergent containers are not considered food grade and cannot be used to store foods. Detergent pail was discarded at the time of inspection.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen chicken was thawing at room temperature. Chicken was still frozen
Corrective Action(s): Frozen foods must be thawed in a cooler at 4C or less or under cold running water to prevent potential growth of pathogens and or the formation of toxins. Chicken was moved into the walk-in cooler at the time of inspection.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation (CORRECTED DURING INSPECTION): Staff members on-site at the time of inspection did not have FOODSAFE Level 1 or equivalent training. Staff member stated they had FOODSAFE Level 1 training - unable to locate staff member's name in the FOODSAFE Level 1 database.
Corrective Action(s): While in operation, at least one staff member on-site must have FOODSAFE Level 1 or equivalent training. Operator with valid FOODSAFE Level 1 training arrived on-site at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Upright glass door cooler was at 4C.
-Sprouts stored on ice.
-Upright freezers were at -18C/-12C.
-Chest freezer was at -24C.
-Under counter freezer was at -16C.
-Hot holding was greater than 60C.
-Pho broth, spring rolls, and cooked chicken properly cooled and were less than or equal to 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Sanitizer spray bottles labelled and tested at 200ppm Quats.
-Deli slicer was clean and well maintained. Slicer is disassembled after each use for cleaning and sanitizing.
-Ice machine was found to be clean and sanitary.
-General sanitation satisfactory at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary. Handwash station supplied with hot and cold running water, liquid hand soap, and a hand dryer.
