Observation (CORRECTED DURING INSPECTION): Two large tubs of gravy measured at internal temperature of 12C. One large pail of gravy measured at internal temperature of 18C at time of inspection. Operator mentioned food was prepared yesterday.
Corrective action: Operator discarded all three containers of gravy at time of inspection. All foods must cool from 60C to 20C in 2 hr and from 20C to 4C in next 4 hr. Improper cooling allows rapid growth of microbes and/or formation of toxin which may lead to foodborne illness.

Observation (CORRECTED DURING INSPECTION): Multiple food in cooler not covered at time of inspection.
Corrective action: All foods were covered by staff at time of inspection. All foods must be covered to prevent potential food contamination.
Raw meat stored above vegetables inside walk-in cooler.
Single use containers used as scoop in dry food storage bin and is left inside.
Corrective action:
Staff reorganized cooler and stored raw meat below vegetable. This ensures meat doesn't potentially contaminate the vegetable. Always store meat below and separate from ready to eat foods and vegetables.
Single use container was discarded at time of inspection. single-use containers cannot be adequately sanitized and therefore must be discarded after each use. Obtain food grade scoop and store them in sanitary condition so handle does not touch food.

-Clean equipment stored in sanitary condition.
-All handwashing sinks in kitchen and in washroom supplied with hot/cold running water, liquid soap and single-use paper towel.
-Kitchen area has sanitizer spray bottle measured at 200ppm bleach.
-2-compartment sink equipped with drain sinks.
-No signs of pest visible at time of inspection
-Exhaust canopy is clean
-Ceiling lights are covered with shatter proof shield in the kitchen area.
-Front area has QUATS sanitizer for counter and tables, measured at 400ppm QUATS.
