Observation:
Dough mixer is maintained in an unsanitary condition (pictures taken at the time of inspection), especially:
- Mixing tool
- Outside of mixer
- Splash guard in mixer
- Mixing bowl
- Around mixer
Corrective Action(s):
Clean and sanitize all areas listed above. Ensure dough mixer is cleaned and sanitized daily. To be corrected today.

Observation:
1. Several food storage containers in dry storage area and in walk-in cooler were found to be uncovered (pictures taken at the time of inspection).
2. One scoop used for multiple food items in dry storage area.
Corrective Action(s):
1. Cover all food items with a food grade lid/cover to protect food from contamination.
2. Separate scoops are needed for each food item in the dry storage area to prevent contamination and to prevent allergic reactions.
To be corrected today.

Observation:
Fan covers in walk-in cooler have dust accumulation.
Corrective Action(s):
Clean fan covers in walk-in cooler. To be corrected by September 10, 2018.

Observation:
Only one sink plug for manual warewashing available. This plug is used for the sanitizing step but was missing at the time of inspection until the employee found it. In addition, this sink plug had plastic wrap around it.
Corrective Action(s):
Purchase a proper plug for each sink. Plastic wrap around available plug was removed at the time of inspection to prevent contamination of dishes during sanitation. To be corrected today.

Only one employee present at the time of inspection. Employee did not have FOODSAFE Level 1 certification.
