Observation: Meat in the rolling rack were uncovered. Missing light cover in the back area (oven location).
Corrective Action(s): Ensure all items in the cooler are covered and missing light cover is replaced.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: There were open holes up on the ceiling in the back area (oven location). There is also gap between the double doors in the back.
Corrective Action(s): Ensure all holes are covered and weather stripping installed to prevent entry of pests in to the premises.

Observation: Single-use containers being re-used to store cheese for the deli. Clean garbage cans being used to cover in the deli display cooler at end of day.
Corrective Action(s): Discard single-use container and use only food grade containers that are re-usable and washable. Garbage cans are for garbage only (not food grade). This was removed at time of inspection.

Observation: There were missing thermometers in the prep line coolers.

Health permit posted in a conspicuous location.
Hand sinks provided with liquid soap and paper towels.
Quats sanitzer measured 200 ppm.
Temperature checks:
-Display coolers were at 4 deg C or colder.
-Walk-in cooler was at 1-3 deg C.
-Hot holding for soup was at 82 deg C and pulled pork was at 76 deg C.
Temperature log was available and up to date.
Observed employees wash hands.
Observed employees with clean uniforms and hair restraint.
General sanitation was good. Floors, walls and counter tops were clean.
Washrooms were in sanitary condition.
