Routine inspection

- Hand washing stations are provided with hot/cold running water, liquid soap in dispenser and paper towels. Please ensure paper towel dispenser in meat cutting area is repaired and stocked with papers
- Food contact surfaces are sanitized with chlorine 100-200 ppm as well as wash and sanitizer with "MC- 10" sanitizers. Ensure to provide test strips for QC 10 sanitizers so that the right concentration is used; Ensure to follow manufacturer instruction.
- Procedure for dish washing in Three compartment sink is followed.
- General sanitation is good.
- Walk-in cooler is at or below 4C.
- Walk-in freezer is at or below -18C
- Display coolers maintain the food temperature at or below 4C
- Temperature monitoring log noted.
- Sanitizer Chlorine 100ppm is provided for sanitation in front.
- Cleaning and sanitizing meat process equipment is followed.
- No obvious sign of pest at this date.

Deli section
- Hand washing station maintained.
- "MC-10" sanitizer provided. Ensure to obtain concentration testing kit. Test the sanitizer concentration and follow the manufacturer instruction regarding the sanitizer concentration for food contact surfaces.
