Observation (CORRECTED DURING INSPECTION): Dishwasher sanitizer residual was at 0 ppm chlorine.
Corrective Action(s): Operator primed the sanitizer line at time of inspection; 100 ppm chlorine detected at dish surface level after rinse cycle. Ensure to check dishwasher sanitizer concentration on a daily basis, using chlorine test strips.

Comments

- All hand washing sinks supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer solution available at 200 ppm from dispenser, in spray bottles, and in buckets for storing wiping cloths.
- Dishwasher dispensed 100 ppm chlorine to dish surface after sanitizer line was primed.
- Walk-in cooler was measured to be at 2C
- All other coolers were at or below 4C. *Ensure lids for inserts at prep cooler are used during non-busy times.
- Ice cream chest freezer has been added - temperature satisfactory.
- Accurate thermometers available for monitoring temperatures
- Food storage practices good - all food stored off the floor, covered, labelled
- General sanitation good
- No signs of pest activity noted
