Observation (CORRECTED DURING INSPECTION): Noted dipper well not being used to store ice cream scoops. Operator stores scoops in an insert of water above the cooler unit.
Corrective Action(s): Ensure dipper well is used to store icecream scoops to ensure 4C or less is maintained and there is adequate velocity to recirculate the water (ie. remove dairy).

Observation (CORRECTED DURING INSPECTION): No paper towel available at the three compartment sink.
Corrective Action(s): Ensure soap, paper towel and hot/cold running water are available at the three compartment sink so that staff can wash hands between handling dirty and clean dishes.

Comments

Premises is an icecream shop that provides various icecream desserts as part of menu.
Hand wash station in in front service area and washroom had soap, paper towel, hot and cold running water. See violation code 401 re: paper towel at 3 compartment sink.
All coolers 4⁰C or less (under counter in front area, domestic refrigerator in the back, inserts above freezer units for cream and scoops)
Freezers less than -18C or less.
Premises does not hot hold any perishable foods, only sweet non perishable toppings for icecreams (ie. caramel sauce, chocolate sauce..etc)
Overall general sanitation satisfactory. See violation code 306 re: cleaning.
No obvious sign of pest infestation noted at time of inspection. Operator has monthly contract with pest control company. Follow all recommendations made by technician.
Back door was closed at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
High temperature dishwasher achieved 71C with thermolabel.
3 drain plugs available for 3 compartment sink.
Dipper functional but not used operationally. See violation code 302 re: scoops.
100ppm chlorine sanitizer solution with cloths submerged availabled.
All stored foods appeared protected (ie. stored off the ground, covered..etc)
