Comments

-Follow-up inspection to May 28, 2019. -Hot holding was greater than 60C. Smaller pieces of chicken are now made to order and no longer hot held for long periods of time. -Reviewed cooling procedures. Chicken made this morning at approximately 11 to 12 were being cooled in shallow trays and was probed between 4C to 7C. Chicken has a total time of 6 hours to cool to 4C. Facility is no longer cooling chicken in the larger containers. -Please contact the inspector if you have any questions or concerns.
