209 - Food not protected from contamination [s. 12(a)]
Observation: Open bucket of ice cream found inside the ice cream cooler. Rack of rib was found on the floor in the walk-in cooler. Light cover over the food preparation area in the kitchen was missing.
Corrective Action(s): Discarded ice cream and rack of rib at time of inspection. Replace missing light cover.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Underneath dishwashing area, cooking/frying/ice machine equipment, underneath walk-in cooler shelving units, shelving units in the pasta area and inside prep line coolers/drawers had food debris, stain, grime and grease build up. Drain cover for the beer keg coolers is missing and debris building up in the drain and may cause back up. Dry storage area requires attention as well as staff area. Trolley carts used for dishwashing area was filthy.
Corrective Action(s): Improve general sanitation in the kitchen overall but pay special attention to the areas noted above. Detail cleaning required in these area and items specified. Pest control report also notes improving sanitation in the kitchen. Sanitation together with pest control is the best way to ensure premises is free of pests. Good sanitation also prevents cross-contamination during food preparation.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Some tiles in the cooking area have been replaced. However, there are still tiles in the back and dishwashing area that require replacing. Re-grouting of most tiles (especially in the dishwashing area and in the back area) have worn off.
Corrective Action(s): Continue to replace the missing or broken tiles and re-grouting of tiles is necessary to ensure sanitary condition of the kitchen area.

Sanitizer *quats* measured 200 ppm (buckets/spray bottles).
Dishwasher had chlorine residual of 100 ppm at the plate surface.
Temperature checks:
Walk-in cooler was at 1-3 deg C.
Walk-in freezer was at -18 deg C.
Prep line coolers were at 1-4 deg C.
(internal temp. of meat topping was at 3.6 deg C/ soup was at 69 deg C)
Hot holding for sauce & soup was above 60 deg C.
Temperature log was available and up to date.
Active pest control in place; no sign of pests noted
Manager and supervisor - valid Food Safe 1 certification
Staff hygiene - clean uniforms and hair restraint, observed hand washing
Servers' area & bar area:

Note:
Roof was being repaired at time of inspection to address leak during the most recent rain storm.
Bad odour from the dishwashing area - seal for the grease trap scheduled to be done.
Ceiling tiles and other damages from the water leak to be addressed once roof repair completed.
