Observation: REPEAT VIOLATION:
4 spray bottles on site that are allegedly for use as sanitizer sprays. One (with original cleaning label) was found with >200ppm bleach, while the other 3 either had no detectable bleach, or far greater than 200ppm. None of these bottles was correctly labeled.
Bottles are also much too small for practical use on band saw, meat grinder, and prep tables.
Corrective Action(s): 1) Properly dilute your bleach using 5ml for every 1 litre of water
2) Get better spray bottles
3) Label all bottles
4) USE THEM

Observation: Heavy rodent infestation ongoing. At time of inspection, 3 traps were checked, 8 dead mice found. In addition, a live mouse was observed leaving a full trap.
Corrective Action(s): You must do more to control the infestation. Cleaning must be done nightly. Product must be lifted away from the ground.

Observation: Makeshift shelving in meat cooler not adequate for food storage. Top shelf is peeling, previously sealed wood, middle is raw wood, and bottom is old signboard
Corrective Action(s): You may use shelving that is smooth, non absorbent, and easy to clean. This usually means plastic, metal, or sealed wood products.

Comments

Your most pressing issue is your rodent infestation. Multiple pest control companies have come and gone, but the root cause of poor sanitation and pest entry remain.
A particularly active hotspot appears to be the wall near the back door / rice shelf/ flour shelf. Remove all product from these bottom shelves, and discard rodent damaged goods.
Proper sanitation of meat contact surfaces is not occurring. This is a simple procedure of wash, rinse, sanitize at least every 4 hours. If this can't be done, meat will need to be prepared offsite at a facility than can manage basic sanitation.
Follow up inspection Monday. If significant strides have not been taken to address the rodent issue, the store will be issued a closure order until infestation is under control.
