Observation (CORRECTED DURING INSPECTION): 1) No food-contact surface sanitizer was readily available for use at time of inspection.
2) 0 ppm chlorine residual was detected at the dish surface after final rinse cycle.
Corrective Action(s): 1) Staff prepared bleach sanitizer solution at time of inspection. 100 ppm chlorine residual detected. Ensure to change solution every 2 hours at a minimum, or sooner if the solution becomes visibly dirty/cloudy.
2) Operator primed the sanitizer line at time of inspection. 100 ppm chlorine residual detected at the dish surface after final rinse. Ensure to use test strips to check the sanitizer concentration of the dishwasher daily.

Observation (CORRECTED DURING INSPECTION): Hand sink near cook line was not easily accessible, as it was obstructed by large pots and pans.
Corrective Action(s): All hand washing stations must be easily accessible for hand washing.

304 - Premises not free of pests [s. 26(a)]
Observation: A small amount of mouse droppings was noted in hard-to-reach corners of the dry storage room.
Corrective Action(s): Remove droppings and disinfect affected areas with 1000 ppm bleach solution. Check daily for any ongoing activity.
Regular pest control is in place - please email copies of most recent invoices to health inspector.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1) Food debris build-up/spatter noted behind/under cooking equipment and on upright freezer near cooking equipment and hand sink.
2) Dough machine had not been in use yet but was not clean.
Corrective Action(s): 1) Ensure deep cleaning is done regularly. Clean and sanitize areas noted above.
2) Do not leave the dough machine dirty overnight. Dough machine and all other food-related equipment must be cleaned and sanitized after each use and at the end of each day.

Comments

- Hand washing sinks were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Walk-in cooler, prep cooler, and display cooler were measured at 4C or colder.
- All freezers measured at -18C or colder.
- No hot-holding of food at time of inspection.
- Low-temperature chemical dishwasher achieved 100 ppm chlorine residual at the dish surface after final rinse cycle (after operator primed the sanitizer line - see violation code 302 above).
- Ventilation canopy was noted to be clean
- Food stored in coolers were properly covered, with good separation between raw and ready-to-eat food items.
- Food stored in dry storage areas were properly covered and stored off the floor.
