Observation: Too many wiping cloths. Cloths lining food contact surfaces.
Correction: Limit the use of wiping cloths. Cloths, used on food contact surfaces must be stored in a sanitizer at all times.
Comments

Reinspection based on previous inspection report.
- Food storage: Improved. Ensure all food/ingredients are being stored in covered, food grade containers.
- Cleaning/disinfection: Ensure all food contact surfaces are cleaned/disinfected after use, or on a timely manner (ie: 3-4 hours)
- Wiping cloths: Limit the number of clothes being used. Store all clothes in a sanitizer: completely submerged. - Use 100ppm bleach - 30 ml (2 tablespoons) of 5% unscented bleach in 4.5 litres (1 gallon) of water. Change sanitizing solutions in sinks and buckets every couple of hours. Change sanitizing solutions in bottles daily. Use test strips to measure the concentration of sanitizer.
- Sanitation: Great improvement. Facility is to be kept clean and organized. Continue efforts to keep all surfaces in good repair.
