Observation: There was no paper towels in the paper towel dispenser.
Corrective Action(s): Provide paper towels at this handwashing station. The dispenser must be stocked with paper towels at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation: Food items (ie. toppings) stored uncovered in a metal bowl in the dry storage area underneath a box of disposable cups.
Corrective Action(s): Cover the food items with plastic wraps or proper lids.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Significant build up of grease and dirt throughout the kitchen. Specifically:
- floors in the walk in cooler
- underneath the two compartment sink
- around the stove top
- around the deep fryer
Corrective Action(s): Clean the areas noted above. Implement a regular cleaning schedule.
Date to be corrected: Today and ongoing.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: The additional handwashing station (one of the two compartment sinks) is missing a paper towel dispenser. This was noted in the previous report as there is inadequate number of handwashing station in the kitchen.
Corrective Action(s): Install a paper towel dispenser in the area noted above.
Date to be corrected: One week.

502 - In operator’s absence, no staff on duty has FOODSAFE Level 1 or equivalent [s. 10(2)]
Observation: There was no FOODSAFE certified staff on duty at the time of the inspection. This is a repeat violation.
Corrective Action(s): The person in charge stated that he will register and attend the FOODSAFE course next week. This must be completed next week. Failure to comply will result in violation tickets.

Comments

- General sanitation needs improvements.
- All coolers (walk in, display) < or = to 4C.
- Freezer (chest, upright) < or = to -18C.
- Temperature logs for all coolers and freezers are missing. The operator does not record temperatures. Daily temperature logs are to be started and kept on site for review by the health inspector.
- Two compartment sink available for manual dishwashing. Sanitizer available at 100ppm chlorine solution. Ensure to follow the proper manual dishwashing procedures and do not skip the sanitizing step.
- Surface sanitizer available in spray bottles at 100ppm chlorine solution. Wiping cloths are presoaked in water solution.
- Dry storage area is satisfactory. Dry food items are stored in food grade containers with tight fitting lids.
- No signs of pest activity at the time of the inspection.
