Observation (CORRECTED DURING INSPECTION): Large pot of food observed cooling in the walk-in cooler. The pot was placed in the walk-in cooler the previous night. Internal temperatures measured approximately 30C.
Corrective Action(s): Discard pot of food. Food must be cooled from 60C to 20C within 2 hours and 20C to 4C within 4 hours. Use ice wands to cool large pots of food or portion the food into shallow pans to allow cooling to occur quickly. Date to be corrected by: Immediately

Observation: Accumulation of debris observed on cooler door handles and flour storage areas.

- 100 ppm bleach sanitizer available at the three compartment sink
