Observation (CORRECTED DURING INSPECTION): The surface sanitizer measured 0ppm QUAT solution. The staff was using degreaser stored in "sanitizer" labeled spray bottle to sanitize food contact surfaces. This is not acceptable.
Corrective Action(s): Immediately replace the surface sanitizer bottle with the QUAT sanitizer measured at 200ppm concentration. Re-sanitize ALL food contact surfaces with the QUAT sanitizer.

Observation: 1) Pastry cart stored uncovered in front of the entrance to the kitchen. Multiple boxes, bags, and other items stored behind it. The staff stated that they are cooling the pastry.
2) Mulitple boxes of food items stored directly on the floor. There is inadequate shelving wire racks.
Corrective Action(s): 1) Recommend getting pastry curtain to cover the cart to protect from contamination.
Correct by: Today and ongoing.
2) Obtain an additional wire rack to store all your dry food items.
Correcy by: One week.

Observation: The daily temperature log for all refrigeration units was NOT kept up to date (last logged on June7th).
Corrective Action(s): Immediately start the daily temperature log for ALL refrigeration units and keep logs on site for review by the health inspector.

Comments

- General sanitation is satisfactory.
- Front/back handwashing station supplied with cold/hot running water, soap, and paper towels.
- Undercounter cooler in the back of the kitchen = 4C
- Undercounter cooler in the front of the kitchen = 3C
- Display cooler in the front of the kitchen = 4C
- Chest freezer (front) = -18C
- Upright freezer (back) = -18C
- No hotholding units
- High temperature dishwasher achieved 71C at the plate's level during the final rinse cycle.
- Two compartment sink available for manual dishwasing. QUAT sanitizer available at 200ppm concentration.
- Dry storage area needs better organization. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity.
- FOODSAFE trained staff on duty. Verified at the time of the inspection.

Items corrected and/or completed as required from report #230628:
- Surface sanitizer spray bottle now labeled as "sanitizer"
- Sanitizer dispenser still too hot. Adjust the hot water setting.
- You MUST obtain a waterproof thermometer to test the sanitizing temperature of the high temperature dishwasher. This must be part of your daily checks. Correct by: Two days.
