Observation: Green wiping cloth used to hold grill utensils. These cloths are thrown into the bin after each shift and will be picked up for cleaning on a set frequency. Food contact utensils cannot be stored ontop of absorbent materials.
Corrective Action(s): Do not use absorbent materials to contain grease from utensils that are stored on top of them. Switch to no cloth and clean the baking sheet every 4 hours or as necessary. Date to be corrected: today

-Freezers meaured -18C: 2 chest freezer, 2 downstair freezers
-Ensure extra equipment stored downstairs is washed and sanitized properly before using
-Bleach bucket and bottles measured 100ppm chlorine
-Ranch and muffin cooler measured 8C. No perishable foods stored in here
-Dishwasher measured 81.4C at the plate level.
