Observation (CORRECTED DURING INSPECTION): 1) Quats spray bottle was at 50ppm
2) Egg cutter had food residue on the wires.
Corrective Action(s): 1) Quats sanitizing solution must be at 200ppm to allow for proper sanitizing of food contact surfaces. Sanitizer spray bottle was refilled and tested at 200ppm at the time of inspection.
2) Ensure all equipment is properly cleaned and sanitized after each use to prevent potential contamination of foods. Egg slicer was cleaned and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Flour for batter is not discarded at the end of each night.
Corrective Action(s): Ensure flour is discarded at the end of each night to prevent potential cross contamination. Flour was discarded at the time of inspection.

Observation: Additional cleaning required along the cook line and door seals for the prep cooler.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition to prevent potential pest attraction.

Comments

-Walk-in cooler was at 3C.
-Walk-in freezer was at -20C.
-Both prep coolers were at or below 4C (top and bottom). Right cooler unit is leaking water - temperatures are still okay.
-Upright freezer was at -17C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Bar glasswasher had a final rinse of 12.5ppm iodine on the glass surface (minimum 12.5ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats spray bottle in bar was labelled and tested at 200ppm.
-Deli slicer was found to be clean and well maintained.
-Ice machine was found to be clean and sanitary.
-General food storage practices good at the time of inspection. Raw foods stored below ready-to-eat foods.
-Washroom clean and well maintained.
-Staff member on-site stated he successfully completed FoodSafe Level 1 last week. Information was not found in the FoodSafe database and staff member did not have a temporary certificate of completion.
