Observation (CORRECTED DURING INSPECTION): Ice scoop stored within ice bin with handle in contact with ice.
Corrective Action(s): Ensure ice scoop is stored in a manner that protects ice from potential contamination (e.g. stored within a clean, dry container outside ice bin).

Observation: It was stated that preparation cooler is not maintaining temperatures of 4 degrees C or less and that a technician would be on site today to repair cooler. Food inserts currently located within ice (internal food temperature at 4 to 5 degrees C).
Corrective Action(s): Ensure cooler is capable of maintaining foods at 4 degrees C or less. Reminder to store only small amounts of food on ice, replenish ice as needed to maintain foods at 4 degrees C or less, and store foods in a functional cooler at 4 degrees C or less for long term storage (e.g. after lunch/dinner rush is complete or overnight). Routine inspection conducted:

- Preparation cooler inserts (located within ice) internal food temperature at 4 to 5 degrees C
- 1-door reach-in coolers at 3 to 4 degrees C
- Bar cooler at 3 degrees C
- Upright freezer at -13 degrees C
- Thermometers available for cold holding units.
- Hot holding internal temperatures at 60 degrees C or more
- Hot and cold running water, liquid hand soap, and single use paper towels available for hand washing stations.
- Vinyl gloves available
- High temperature dishwasher measured 73 degrees C at the utensil surface during the final rinse (minimum: 71 degrees C)
- Bar glass washer measured 47 degrees C (max) and 12.5 to 25 ppm iodine in rinse residual.
- Quaternary ammonium compounds (quats) sanitizer measured 200 ppm in labeled spray bottles
- No signs of pest activity observed at time of inspection.
- Premises is serviced by a pest control company.
Note: New coated wire racks in place for both glass coolers.
