Observation (CORRECTED DURING INSPECTION): Sanitizer buckets kept in the front of the premise at drive through counter and under preparation table was measured to be at 50ppm QUATS.
Correction: refill the sanitizer buckets to ensure 200ppm of QUATS is maintained at all times.

Observation (CORRECTED DURING INSPECTION): Ants spotted on front counter.
Correction: operator was asked to sanitize the counters immediately and consult pest control services for adequate recommendations if problem persists.

Comments

Recommendations:
-There is grease accumulation behind fryers and ovens on the KFC side. Clean up the floors to prevent any pest harbouring in future.
-Ensure employees know about adequate glove use and the employee handling cash should not touch food being served at the drive-through.

Comments:
-All coolers, including the walk-in cooler, were maintaining food at 4C or below.
-Walk-in freezer was at -18C.
-Raw meats stored on the bottom shelves, ready-to-eat foods on the top shelves.
-Hot-holding units holding food at 60C or above in both Taco-Bell and KFC sides of the kitchen.
-Containers are covered in storage, packages are sealed.
-Scoops are kept outside dry ingredient bins.
-Ice-machine is clear of any signs of mould or mildew.
-Ice-scoop kept outside in sanitary condition in another bucket.
-Handwashing sinks are equipped with hot and cold running water, liquid soap, and disposable paper towels.
-Ware washing sinks equipped with drain plugs and sanitizer sink was measured to be at 200ppm QUATS.
-The manager has a valid Food Safe level 1 certification valid until July 22, 2023.
-Permit to operate is posted for easy viewing.
