Observation (CORRECTED DURING INSPECTION): Handsink in the kitchen was not equippmed with paper towel at the time of inspection.

Comments

- Temperatures of all coolers and freezers were adequate. Food prep coolers were at 6C. The operator lowered the temperature and the cooler was able to maintain 3C. Ensure that coolers are maintained at or below 4C at all times.
- Sanitizer bucket with cloth had 50ppm chlorine. Ensure that there is 100ppm chlorine in the sanitizer bucket at all times. Sanitizer spray bottle is recommended to maintain the chlorine concentration for a longer period of time.
- Low temp. dishwasher achieved 50ppm chlorine. Closely monitor for the level of sanitizer in the container to ensure that it does not run out while in operation.
- Food storage was adequate.
- No signs of pest activity.
- General sanitation was adequate.
