302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation (CORRECTED DURING INSPECTION): -The wash tray in washer improperly organized -whole mound of dishware thrown on the tray where dishware in the middle will not be cleaned Dishwasher is showing error codes and the water is not draining -unable to run a cycle for the duration of the inspection NOTE: no Daily Temperature Logs are being maintained This is a repeat infraction from the April 20, 2023 routine inspection -Correction Order issued Operator to Manually Wash in the meantime -The QUAT sanitizer spray bottle for the bar has no reading Corrective Action(s): Organize the dishware properly using the tray slats so all parts of dishware are cleaned and sanitized Repair the dishwasher -Maintain the QUAT sanitizer spray >200ppm as per test strips Violation Score: 15
