All coolers are now 4 degrees Celsius or less.
Proofer has been cleaned. Discussed with operator about ensuring the proofer is cleaned daily to prevent build up of grime and filth. The warm and moist conditions inside the proofer can provide a great environment for bacteria to grow.
Hand sink in back room is now accessible.
Double sink in the front is now draining without trouble.
Rodent droppings have been cleaned up.
Organization of back room has improved.
Broken and water damaged ceiling tiles have been replaced.

Some light fixtures in the back room are still not working. Operator suspects electrical wiring issues and agreed to hire an electrician to determine problem and repair/replace as necessary. Operator agreed to ensure all light fixtures are working by October 3, 2017.
