Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Various utensils, pots, pans, and containers are not being maintained in a sanitary condition. Visible food residues observed on the utensils and equipment.
Correction: Employees are currently unable to clean and sanitize the equipment due to a blocked drain (3-compartment sink is inoperable).
Closure order issued to cease operations of the food service establishment until the blocked drain is cleared/repaired.
All dishware, knives, utensils, containers, baskets, cutting boards, etc. must be cleaned and sanitized before/after use to remove food residues, oils, and bacteria.

Observation: Employees are unable to wash dishware, utensils, etc due to a plugged drain connected to the 3-compartment sink
Correction: Closure order issued to the food service establishment. Food service operations must stop until the blocked drain is cleared and all soiled dishware/utensils/etc are thoroughly cleaned and sanitized.
Comments

-Follow-up inspection to confirm drain blockage has been cleared and the food service establishment is ready to resume normal operations:
-Drain blockage has been successfully cleared. 3-compartment sink is now operational for warewashing activities
-Employees are in the process of cleaning additional areas in the kitchen (ie. underneath the 3-compartment sink)
-Ensure all dishware, utensils, pots, pans, food containers, etc. are thoroughly cleaned and sanitized prior to opening for business
-Chlorine sanitizer must be used in the 3-compartment sink when washing food utensils and equipment
-Chlorine sanitizer must also be used to sanitize food contact surfaces (eg. cutting boards and prep surfaces)
-Closure order rescinded, subject to the above-noted conditions
*Note: Ceiling spaces in the kitchen must be cleaned on a regular basis to prevent accumulation of oil residues on the overhead pipes and bulkheads. If oil continues to accumulate, it may be a sign that the exhaust ventilation system needs repairs/maintenance
