Observation (CORRECTED DURING INSPECTION): Observed worker piling up cooked beef portions from the pot into a rubber maid container
Corrective Action(s): Decrease the volume and increase surface area for proper cooling:

-One layer only, divide into smaller portions

Temperature cooling must:
from 60 deg C to 20 deg C within 2 hours via this method
then transfer to the container from 20 deg C to 4 deg C in the Walk-in cooler

Observation (CORRECTED DURING INSPECTION): Double stacking observed at insert level of the kitchen preparation cooler -temperature of sliced tomatoes and cucumbers at 15 deg C and have been there since this morning >2 hours
Corrective Action(s): Discarded the food.

Do not pass the fill-line of the preparation cooler

NOTE: there should be no bare paper towel rolls left around the kitchen -all should be in a dispenser/spindle

-Any open bulk food bags must be placed in a rodent proof container
