Observation (CORRECTED DURING INSPECTION): Observed staff on duty omit sanitizing step. Cutting board was washed, rinsed and put away on shelving. This is not correct manual dishwashing procedures. When asked about proper dishwashing procedures, staff member was aware of sanitizing step. Signs posted on back wall.
Corrective Action(s): Sanitize all dishes after washing and rinsing. Ensure all staff are trained and following proper manual dishwashing procedures.

Observation: Mouse droppings noted under cup dispenser below front service counter. Appears to be from previous issues.
Corrective Action(s): Clean up mouse droppings and sanitize the area. Continue to monitor for further activity. Correction date: Sept. 21/17

Observation: Food debris, dirt noted on hard to reach areas of the floor - under equipment and where floor meets walls/counters. Spill noted under counter where drink cups are stored.
Corrective Action(s): Thoroughly clean all areas of the floor to remove dirt and debris. Clean up all food splatter/spills from walls and cabinets. Correction date: Sept. 27/17

Observation: Large section of ceiling tiles missing in back area. One portion is over top of area where clean dishes are stored.

-Handsinks supplied with liquid soap and paper towel.
-Walk-in cooler was at 3C
-Walk-in freezer was -18C
-Small undercounter cooler was 4C
-Drawer freezer was -18C (top drawer) -15C (bottom drawer)
-Pull out freezer (burger patties) was -9C
-Second drawer freezer not currently in use.
-Time tracking in place for items at room temperature holding as per FSP
-Hot holding of food was >60C Gravy 62C Chicken strips 71C
-Wiping cloths stored in quats sanitizer solution 200ppm
-High temperature dishwasher met sanitizing requirement. Temperature of final rinse was 73C at the dish surface as measured with min/max thermometer.
-Pest Control contract in place with monthly service. Report for August shown at the time of the inspection.
