- Manual dishwashing method used (wash-rinse-sanitize).
- Dishes soaked in 200 ppm QUATS sanitizer solution.
- There were too many dishes that not every surface of dishes was fully soaked in the sanitizer solution.

- 2-door-cooler: -2 degrees C (macaroni)

- Stand freezer: -10 degrees C (chicken) (in frozen state)
- hot holding (popcorn chicken): 78 degrees C, 84 degrees C, 72 degrees C
- hot holding (french fries): 96 degrees C

- in-use utensils for mashed potato, gravy, and corn were placed in hot-water container: 71 degrees C

- raw chickens were being breaded at the time of inspection and measured 12 degrees C. Chickens are breaded and to be deep fryed after.
- Glaze for corn noted at room temperature. Original package was checked to verify that it is a shelf-stable item.
NOTE:
- Glaze for corn is time stamped for 7 days and to be discarded after.
- Waste bins noted under counter:
- popcorn chicken: 47 degrees C
- chicken thigh: 25 degrees C
- chicken wing: 29 degrees C
- This is the restaurant's policy to store left over from the night before in the waste binds for a verification purpose.
- French fries noted in a bowl under counter and measured 38 degrees C.
- French fries are discarded and replaced every 10 minutes. Timer is set on the Stand freezer. Fries are left in a waste bowl for a verification purpose.

- ice machines sanitary and scoops placed in a clean container
- in- use utensils are washed and sanitized every 1 hour.
- Take out container are stacked and kept clean.
- 3 dry storages noted upstairs ---> traps are noted along the wall and in the corner. ---> easily accessible and sanitary.
- grease trap service is up to date (Last service date is July, 19 / 2023)
- Ventilation hoods are sanitary
- kitchen exhaust systems are serviced regularly. (Next service date is December, 2023).
- FoodSafe Level 1 provided
- Pest Control services provided by Rentokil Steritech 1-2 times a month. ---> Last reports dated as July, 24 / 2023, and claims that 1 mouse was removed from trap by ventilation system and a new trap was added.
---> keep monitoring for any active infestations.
