Handwash stations stocked. Cooling units all below 4 C Freezer below -18 C Good organization and coverage of food in storage. Some of the shelves with old food debris waiting to fall onto food. Watch for and make sure shelves are cleaned regularly. This will help prevent cross contamination. Dishwasher at 77 C at plate. Quats in dispenser and dispensing at 200 ppm. Area and floor next to grill much cleaner. **Dishwash pit in need of attention. Good use of bleach in cleaning process of cambro units.
