Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher achieving 10 ppm at the plate level.
Corrective Action(s): Sanitizer was changed and dishwasher primed. Dishes were rewashed. Low temperature dishwasher achieving greater than 50 ppm. Dishwasher has not been serviced for some time. A technician was called and will service the machine. Monitor sanitizer level in dishwasher to ensure it maintains 50 ppm or above. Ensure to check sanitizer levels regularly.

Observation (CORRECTED DURING INSPECTION): REPEAT: Metal spatulas stored in hand sink in front service area.
Corrective Action(s): Spatula's were removed. Ensure the hand sink remains free of obstruction and is used ONLY for hand washing. Utensils are not to be stored in hand sink to be washed. Hand sinks are to be available for staff to wash their hands at all times.

Observation (CORRECTED DURING INSPECTION): 1. REPEAT: Bowls observed submerged in rice and sugar.
2. REPEAT: Rice scoop observed stored in room temperature water.
3. REPEAT: Self serve inserts containing starch and vegetables observed without their own no spoon/tong. Customers observed using the same tongs to grab various starch and vegetables.
Corrective Action(s): To prevent cross contamination:
1. Bowls were removed from bins and washed. Ensure all scoops are stored outside dry good bins.
2. Ice was added to insert storing rice scoop. Ensure rice scoop is 1. stored dry and washed every 2 hours or 2. Submerged in ice water at 4 C or colder or 3. Stored in water at 60 C or above.
3. EVERY INSERT IN THE SELF SERVE AREA MUST have their own utensil. This is to ensure foods are free from contamination and to prevent food allergies.
