Follow up to health inspection report # MBEK-C4UQW8.
Walk in cooler at 3 degrees C.
New prep cooler has been installed in place of previous prep cooler. Temperature measured at 3 degrees C (above and below).
Thermometers available for coolers.
Bleach water sanitizer available in buckets with wiping cloths, and in labeled spray bottles (front and back areas) at 100 to 200 ppm chlorine.
Additional equipment on site pending installation (stainless steel 2-compartment prep sink and stainless steel hand sink).
Minimal curry/sauce storage at time of inspection. Available curry tested at an internal food temperature of 4 degrees C or less.
Probe thermometer available for internal food temperature checks. Reviewed cooling practices with owner/operator. One ice wand available on site. Recommendation: Obtain additional ice wand(s) and/or shallow containers as needed for operational/capacity needs once normal operations resume.
No damaged cans observed on site.
No open cans observed to be used for food storage.
Food is stored off the floor and generally covered.
Back area is organized. No signs of pest activity observed. It was stated that some equipment is pending removal from the premises.
Areas noted on previous report (violation 306) have been cleaned to remove oil and food debris.
Revised floor plan for layout and equipment changes has been submitted to the Environmental Health Officer (EHO). Note: Please review comments and re-submit revised floor plans with requested changes.
Discussed with owner/operator: 1. Installation of drop ceiling in back cooking area that is smooth, non-porous, easy to clean and suitable for the intended purpose (e.g. T-bar with vinyl coated ceiling tiles).
2. Refinishing of walls: Ensure all wall finishes are smooth, non-porous, and easy to clean. Walls which may be subject to moisture (e.g. behind sinks) are to have suitable finishes/backsplashes in place (e.g. FRP).
