Comments

- Hand washing stations are maintained with hot & cold running water, liquid soap and paper towels
- 200ppm QUAT sanitizer present at warewashing sinks and in spray bottles
- High temp dishwasher reached 71C at utensil's surface
- Meat slicer is taken down, washed & sanitized within every 4 hours
- Temperatures of all refrigeration units in the bakery, deli and produce meet regulatory requirements (<4C coolers, <-18C freezers)
- Hot holding item- chicken- probed and measured >60C
- The gap along the wall in the poultry walk-in cooler has been sealed
- Foods are stored in a manner that prevents cross-contamination and off of floor
- Pest control service in place
- No signs of pest activity noted at the time of inspection
- Employees show good hygiene
