Front Kitchen server, ensure rice is kept above 60C when hot holding. Sink rice into hot holding unit to maintain temperature above 60C and do not sit on tray lid above the hot holding unit.
Rice is being served for the lunch period. If rice is left out at a temperature between 4C and 60C longer than 2 hours the product must be discarded. Rice only out for the 15 minutes during lunch rush.

Food storage is good, covered, dated and stocked to ensure adequate air flow
