Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)] (Clean dishes were stored on open prep table top in an unprotected manner. An ipad was stored on top of a clean stack of dishes.)
Comments

- Clean dishes are now being stored in cupboards above prep cooler - good.
- Most food items in coolers and freezers were properly covered. A few large pots/containers were uncovered, however operator stated he would be re-portioning into smaller portions later today.
- Scoops for dry ingredients were not stored directly in the bins. Good. Reminder to wash and sanitize scoops after each use.
- Food storage inside coolers was organized. Raw eggs still stored on lowest rack in cooler.
- Bleach sanitizer solution available at 200 ppm in spray bottle
- Old unused equipment in kitchen have been removed - good
- General sanitation has improved significantly. Floors in hard to reach areas, under equipment, doors of coolers and freezers, and ventilation canopy were all observed to be clean and free of food debris.
