Observation (CORRECTED DURING INSPECTION): A container of cooked lamb was noted with an internal temperature of 53.0C in the hot hold unit.
Corrective Action(s): As per food handler, the container of cooked lamb was placed in the hot hold unit about 1 hour ago. Reminded staff that food must be cooked to 74C prior to placing in the hot hold unit. **Issue was corrected at the time of inspection** Staff placed the container of lamb back in the stove for cooking before placing in the hot hold unit.

Observation (CORRECTED DURING INSPECTION): 1. Over 200 ppm chlorine residual detected in one bleach sanitizer container. < 10 ppm chlorine residual detected in a second bleach sanitizer container.
2. Dried food soil noted on the back of the meat slicer.
Corrective Action(s): **Issue corrected at the time of inspection**
1. Food handler remixed the bleach sanitizer solution. 200 ppm chlorine residual now detected in the sanitizer container.
2. Operator cleaned and sanitized the meat slicer during the inspection. Please clean and sanitize this equipment everytime after use.

Observation: 1. Disposable container, used as scoop, being stored in the bulk flour container.
2. Missing light shield noted in the area with the meat slicer.
3. Bulk rice stored in a box instead of a pest proof container.
Corrective Action(s): 1. Replace the disposable container and use a proper scoop, with a handle, for the bulk flour bin.
2. Replace the missing light shield, installed break-resistant light bulbs (e.g. LED lights) or installed protective sleeves over the exposed bulbs.
3. Place rice in a pest proof container for bulk dispensing to avoid pest from gaining entry to the food.

Observation: 1. 10+ flies noted in the dishwashing area and in the bar area.
2. Mouse droppings noted in various areas of the facility, including the floor below the shelves in the dry storage room, top of the dishwashing machine, on the floor below the pots and pans storage shelf near the dishwashing area and below the bulk (white containers) of bulk food and prep table in the meat slicer area.
Corrective Action(s): 1. Maintain the cleanliness of the facility to eliminate any possible food source for the flies. Continue working with your external pest control company to control the fly situation.
2. Sweep, clean and sanitize any noted mouse droppings to deter the mouse from coming back as they like to feast on their own fecal materials. Cleaning also allow for monitoring of areas to determine if the situation is improving or becoming worse.

Observation: Screen door not properly fitted to the back door. Noted with holes large than the size of a pencil.
Corrective Action(s): Fix the screen door so that it is properly fitted to the back door. No gap larger than the size of a pencil should exist around the screen door to prevent pest entry into the building.

Routine inspection conducted today:
All handwash stations, including washrooms, accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
All food stored protected in the cold storage units.
High temperature dish machine noted at 71C at the plate level during the rinse cycle.
Cookline noted exceptionally cleaned. Deep fryer, fume hood, stove top and grill top noted in excellent sanitary condition.
