209 - Food not protected from contamination [s. 12(a)]
Observation: Many foods were stored directly on the floor in the walk-in cooler and walk-in freezer. Discontinue this practice. All foods must be kept on a shelf.
Corrective Action(s): Move foods to a shelf in the cooler or another cooler. Additional refrigeration space is needed. If there is not enough space to store food in the walk-in cooler, the menu may need to be reduced.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: a) Rice was stored in bags directly on the floor in the storage room.
b) Pest proof containers with lids are needed for all foods stored in bags in the storage room.
Corrective Action(s): a & b) Correct within one week.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Grease buildup and broken bowls observed under the cook line.
Corrective Action(s): Clean within one week.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) The glasswasher had 0 ppm chlorine at the plate level. It was observed that the sanitizer line was not inside the chlorine solution and that the chlorine solution also needed to be replaced. Note that the glasswasher was not turned on at the time of the inspection and is mainly used on weekends.
2) Fix the leak at the sink to the right of the kitchen dishwasher.
Corrective Action(s): 1) Use the back dishwasher until it has been repaired and has 50-100ppm chlorine.
2) 1 week.

Comments

In addition to the above-noted violations, the following items must be corrected:

Chlorine test strips have expired. Purchase new test strips.
Test the dishwasher and glasswasher daily.
Temperature records were not up to date.
Recommend installing a door sweep at the storage room door.
Shellfish tags were not being kept onsite. Keep all shellfish tags for a minimum of 6 months.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher had 50 ppm chlorine.
No evidence of pests, traps were in place. Ensure that pest control reports are kept on site.
Staff are FoodSafe level 1 certified.
The ice machine was clean. Ensure that it is cleaned every month.
Overall sanitation was satisfactory.
