Observation (CORRECTED DURING INSPECTION): Raw meat noted on the blade of a knife that was stored on the magnetic knife rack by the 3-part sink.
**Issue corrected during the inspection** Manager removed the knife from the knife rack for washing and washed and sanitized the knife rack.
Corrective Action(s): Ensure all dishwares are properly washed and sanitized and inspected for cleanliness before putting away for storage.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): > 200 PPM of chlorine residual detected in two chlorine sanitizer spray bottles in the bubble tea area.
**Issue corrected during the inspection** Manager discarded the content of the chlorine sanitizer spray bottles and re-made the chlorine solution. 200 PPM chlorine residual detected in the new sanitizer spray bottle.
Corrective Action(s): Do not add too much bleach to the sanitizer solution when creating the bleach sanitizer as too much may lead to a chemical hazard when used on food contact surfaces. Mix 2 tsp of bleach per 1 L of water for 100 - 200 PPM of chlorine sanitizer.
Request more chlorine test strips from your chemical supply so you can test for the proper chlorine concentration before use.

Observation: 1. Boxes of food products and food contact items stored on the floor in the walk-in freezer, in the dry storage area and along the corridor of the patrons' washroom.
2. Multiple containers of food noted uncovered in the 2 reach-in coolers along the cookline.
Dates to be corrected by for #1 and #2: March 26, 2022
Corrective Action(s): 1. All food products and food contact items are to be stored at least 6 inches off the floor to allow for proper cleaning and sanitation of the floor. It also allows the operator to monitor for signs of pests.
2. All food products in storage (including refrigeration units) must be stored covered with a plastic wrap/ lid to prevent potential cross-contamination of food.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Upon the start of the inspection, meat products were noted thawing in the 2nd compartment of the 3-part sink with a small amount of cold water trickling from the faucet into that compartment.
**Issue corrected during the inspection** Staff turned up the cold water going into the 2nd compartment of the sinks.
Corrective Action(s): When thawing, food products must be completely submerged under cold running water.

Observation: Mouse droppings noted in multiple areas in the dry storage room.

Corrective Action(s): Wash, rinse and sanitize the floor of the dry storage room. By removing all mouse droppings noted in the dry storage room then we will find out whether the droppings noted is a new issue or a reoccuring issue. If mouse droppings return after cleaning, then the operator must contact a pest control company to address the mice issue.

Observation: Mop water noted in the mop bucket.

Corrective Action(s): Discard dirty mop water from the mop bucket. The mop bucket must be immediately emptied after use to prevent attracting and/ or breeding of pests.

Observation: 1. Grease buildup noted along the vent hood.
2. Grease, dust and debris noted in the cabinet of the deep fryer.
3. Dust noted on the ceiling by the vents upon entrance to the kitchen and above the dish machine.
4. Food debris noted along the door gasket of the reach-in cooler in the cook line.
5. Dust noted on the wall in the walk-in cooler.

Corrective Action(s): Wash, rinse and sanitize the abovementioned areas. Any grease or food debris buildup may become a source of food for pests.

Observation: 1. Noted 3 roughly 20 L pails of Rona container used for the storage of broth.

2. Rust noted on the shelvings in the walk-in cooler.

Corrective Action(s): 1. Only use food safe containers for the storage of food. Any other containers, especially ones used previously for the storage of chemicals, are not thoroughly washed and sanitized, then any exisiting materials/ chemicals may leached into the food.

2. Replace the rusty shelves as the rust on the shelves will impede cleaning and sanitizing.

Routine inspection conducted today:

Handwash sink stations, including patrons' washrooms, noted accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigeration units were at ≤ 4C.
All freezer units were at ≤ -18C.
Hot holding for rice was > 60C.
50 PPM chlorine residual detected at the dish surface of the low temperature dish machine.
Chemical spray bottles all noted with proper name labels.
No scoops stored in the bulk bin condiment containers in the dry storage area.
Proper storage of in-use utensils - as per Manager, utensils are changed out every 2- 3 hours.
Noted bean sprouts stored at room temperature (internal temperature measured at 10C) - as per Manager, every 2 hours, all bean sprouts are placed back into a functioning refrigeration unit.

FOODSAFE level 1 verified for the Manager on-site at the time of inspection - expires March 13, 2024.
Permit posted in a conspicuous location.
