Observation: Bakery
1. Small plastic clear storage drawers next to hand sink for storage of piping tips, gloves, equipment:
Food debris and grime build up on drawers, inside and on the outside.
2. Sanitizer dispenser tube inside Rinse Sink. Rinse Sink has left over whipping cream.
Sanitizer Sink has food debris.
3. Dish drying area: black mesh on drying area. Mesh is a porous surface with high surface area that allows for bacteria/mold growth when continuously wet. Dishware and trays being stored directly on mesh.

Back Receiving Area:
1. Snap traps for rodents with food as bait in various corners, underneath produce counter.

Corrective Action(s): Bakery
1. Clean all storage drawers inside and out.
2. Ensure sanitizing sink is clean before adding sanitizer and dishes.
3. Remove and discard black mesh.
Replace with drying racks.
Ensure surface is clean and sanitized before placing cleaned items.

Remove snap traps.
Use appropriate traps without exposed food; follow directions from pest control contractor.

Self serve units appear clean. Single use papers or bags readily available.
Large cabinets at entrance of bakery: baking supplies, decor and candy items are stored covered, neatly, and protected from contamination. Great job.
No signs of pests at the time of inspection.
