Observation (CORRECTED DURING INSPECTION): Low temperature dishwasher had no sanitizer (dishwasher had not been used yet), sanitizer bucket was almost empty.
Corrective Action(s): CORRECTED AT TIME OF INSPECTION - sanitizer bucket changed, pump primed + dishwasher run four times until 50ppm chlorine residual measured at plate surface twice in a row.

Observation: Open Salad boxes stored on shelf
Corrective Action(s): Keep salad boxes in plastic sleeves until needed. Nine sleeves were open at time of inspection which was roughly 3 days requirement according to worker - this many open isn't needed.

General Observations:

- handwashing sink maintained with liquid soap + paper towels
- quats in spray bottles measured at 200ppm residual
- three compartment sink available for manual washing of larger items using "wash, rinse, sanitize" method.
- Walk-in cooler measured at 4C or colder
Note: Lighting in cooler was poor, increase light levels for better visibility of items in cooler
- upright freezer measured at -18C or colder
- Line 1, Line 2 + sandwich line coolers all measured at 4C or colder
- Front drink cooler measured at 4C or colder
- Interior of ice machine kept in sanitary condition
- Back door sealed well + no signs of pest activity at time of inspection
- Washrooms maintained with hot water, liquid soap + paper towels
- Stew, soup + rice all hot held at 60C or hotter
- Can opener (counter mounted) kept in sanitary condition
- Permit is posted in conspicuous location
- Dry storage area organized + clean with items kept off floor at least 6 inches
- Rice + quinoa bins covered well with scoops stored properly (not in product).
- General sanitation good.
- Employee handwashing observed taking place - good.
