Routine inspection conducted:

- Coolers at 4 degrees C or less
- Freezer at -16 degrees C
- Hot holding internal temperatures at 60 degrees C or more - exception: Spring rolls. Spring rolls were within discard times based on today's time tracking records.
- Probe thermometer available
- Food is properly organized and protected from contamination.
- Reviewed cooling procedures with management. Cooked meats are stored in shallow containers that are placed into the walk in freezer for 3 or more hours prior to being transferred to the walk in cooler.
- Quaternary ammonium compounds (quats) sanitizer available at 200 ppm. Built in drain plugs available at three compartment sink.
- High temperature dishwasher measured 76 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- Utensils maintained in sanitary condition
- Hand washing station is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- No signs of pest activity observed.
- Daily temperature and sanitation logs are maintained
